If you haven’t tried persimmons I definitely suggest you do! They are sweet, semi soft and have a texture that’s similar to a mango mixed with a pear. They are best when they are soft so allow them to ripen a bit before eating if you buy them when they are firm. To eat, just wash, remove the top leaves and slice or eat like an apple. Don’t worry about peeling them, the skin is edible!
Yield: 2 large salads
- 1/2 head radicchio, cut into bite size pieces
- 3 cups baby spinach
- 1 persimmon, sliced
- 1 red pear, sliced
- 1 avocado, sliced
- 1/3 cup pomegranate seeds
- 1/4 cup walnut halves
- 4 tbsp honey
- 2 tbsp olive oil
- Assemble all fruit/ veg into 2 bowls or onto two plates. Drizzle with honey and olive oil, sprinkle walnut halves on top. Enjoy!
Ps. If you want to take this salad up another notch, crumble some soft goat cheese on top!!
