Beet & Berry Salad

Nothing BEETS this salad! I used to be weirded out by beets and refused to eat them. Eventually I gave em’ a try and have been obsessed ever since!

Yield: 1 large salad


  • 2 cups mixed baby greens
  • 1/4 blueberries
  • 1/2 cup pickled beets
  • 1/2 cup sliced herb & garlic cooked chicken
  • 3 tbsp goat cheese, crumbled
  • 2 tbsp pumpkin seeds
  • Balsamic Reduction
  • Salt and pepper to taste


  1. Layer all ingredients except for dressing, on a plate or in a large bowl. Drizzle with balsamic reduction and enjoy!
