Nothing BEETS this salad! I used to be weirded out by beets and refused to eat them. Eventually I gave em’ a try and have been obsessed ever since!
Yield: 1 large salad
- 2 cups mixed baby greens
- 1/4 blueberries
- 1/2 cup pickled beets
- 1/2 cup sliced herb & garlic cooked chicken
- 3 tbsp goat cheese, crumbled
- 2 tbsp pumpkin seeds
- Balsamic Reduction
- Salt and pepper to taste
- Layer all ingredients except for dressing, on a plate or in a large bowl. Drizzle with balsamic reduction and enjoy!
