Coconut Orange Energy Bites

These are great to make a big batch of and keep in the freezer for a snack or pair with a yogurt and some fruit for a quick grab and go breakfast!

Yield: 12 energy bites

  • 1/2 cup sliced almonds
  • 1 cup large flake oats
  • 1.5 cups flaked coconut (1/2 cup for energy bites plus another cup for rolling)
  • 2 tbsp chia seeds
  • 2 tbsp hemp hearts
  • 1/2 cup chopped dates
  • 1/2 cup prune puree paste
  • 1 tsp cinnamon
  • Zest of one blood orange

  1. Place all ingredients in a food processor except for the 1 cup of coconut for rolling. Pulse ingredients in the food processor just until the mixture is combined; do not blend the mixture all the way into a puree, you want there to be some more coarse pieces of oats, dates and almonds. The mixture will be slightly sticky.
  2. Divide the mixture evenly and roll into 12 balls, finish by rolling each energy bite in the coconut. I like to portion 2 energy bites into containers/ ziplock bags and store them in the freezer. You can also store the energy bites in the fridge for up to a week. Enjoy!
