These are great to make a big batch of and keep in the freezer for a snack or pair with a yogurt and some fruit for a quick grab and go breakfast!
Yield: 12 energy bites
Ingredients:
- 1/2 cup sliced almonds
- 1 cup large flake oats
- 1.5 cups flaked coconut (1/2 cup for energy bites plus another cup for rolling)
- 2 tbsp chia seeds
- 2 tbsp hemp hearts
- 1/2 cup chopped dates
- 1/2 cup prune puree paste
- 1 tsp cinnamon
- Zest of one blood orange
Directions:
- Place all ingredients in a food processor except for the 1 cup of coconut for rolling. Pulse ingredients in the food processor just until the mixture is combined; do not blend the mixture all the way into a puree, you want there to be some more coarse pieces of oats, dates and almonds. The mixture will be slightly sticky.
- Divide the mixture evenly and roll into 12 balls, finish by rolling each energy bite in the coconut. I like to portion 2 energy bites into containers/ ziplock bags and store them in the freezer. You can also store the energy bites in the fridge for up to a week. Enjoy!
