This granola is super easy to whip up and is a great breakfast companion. Pair with some yogurt and fresh fruit and you’ve got yourself a #balancedbreakfast.
Yield: ~3 cups granola
- 2 cups large flake oats
- 1tbsp ground cinnamon
- 1 tsp vanilla extract
- 3/4 cup tropical trail mix (dried pineapple, mango, almonds, cashews etc.)
- 1/2 cup shredded coconut
- 1/4 cup honey
- Preheat oven to 350 F. Line a large baking sheet with foil, set aside.
- In a large bowl, mix together all ingredients. Spread out in an even layer on the prepared baking sheet. Place in the oven and bake for ~30-35 mins. Allow to cool at room temperature. Once cooled, store in an airtight container/ ziplock bag for up to a week.
- Top yogurt and fruit with this tasty granola and enjoy! I used coconut greek yogurt, banana, kiwi, starfruit and strawberries for a tropical- inspired breakfast bowl :).
