Tropical Fruit Granola

This granola is super easy to whip up and is a great breakfast companion. Pair with some yogurt and fresh fruit and you’ve got yourself a #balancedbreakfast.

Yield: ~3 cups granola


Ingredients:

  • 2 cups large flake oats
  • 1tbsp ground cinnamon
  • 1 tsp vanilla extract
  • 3/4 cup tropical trail mix (dried pineapple, mango, almonds, cashews etc.)
  • 1/2 cup shredded coconut
  • 1/4 cup honey

Directions:

  1. Preheat oven to 350 F. Line a large baking sheet with foil, set aside.
  2. In a large bowl, mix together all ingredients. Spread out in an even layer on the prepared baking sheet. Place in the oven and bake for ~30-35 mins. Allow to cool at room temperature. Once cooled, store in an airtight container/ ziplock bag for up to a week.
  3. Top yogurt and fruit with this tasty granola and enjoy! I used coconut greek yogurt, banana, kiwi, starfruit and strawberries for a tropical- inspired breakfast bowl :).
