This is an easy, flavourful and nutritious plant based salad!
Quinoa is a pretty awesome little grain because it is one of the the few grains that is a complete protein. Just 1 cup of cooked quinoa contains 8g of protein!
Yield: 4-6 servings
Ingredients:

1.5 cups cooked quinoa, cooled

1 cup grated carrots
-
1 can chickpeas, rinsed and drained

1/4 cup golden raisins

1/4 cup dried cranberries

1/4 cup chopped dates
-
1/3 cup chopped walnuts
-
1/2 cup chopped parsley
-
1/2 tsp cumin
-
1 tsp curry powder
-
1 tsp garam masala
-
1 tsp turmeric
-
1 tsp chili powder
-
1 tsp garlic powder
-
1 tsp onion powder
-
1/4 cup olive oil
-
4 tbsp honey
-
Juice and zest of 1 lemon

Salt and pepper to taste
Directions:
- Mix all ingredients in a large bowl! Refrigerate for up to 5 days in a tightly sealed container. Enjoy!
