Moroccan Chickpea and Quinoa Salad

 

This is an easy, flavourful and nutritious plant based salad!

Quinoa is a pretty awesome little grain because it is one of the the few grains that is a complete protein. Just 1 cup of cooked quinoa contains 8g of protein!

Yield: 4-6 servings


Ingredients:

  • 1.5 cups cooked quinoa, cooled
  • 1 cup grated carrots 
  • 1 can chickpeas, rinsed and drained 
  • 1/4 cup golden raisins 
  • 1/4 cup dried cranberries 
  • 1/4 cup chopped dates
  • 1/3 cup chopped walnuts
  • 1/2 cup chopped parsley 
  • 1/2 tsp cumin
  • 1 tsp curry powder 
  • 1 tsp garam masala 
  • 1 tsp turmeric
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder 
  • 1/4 cup olive oil
  • 4 tbsp honey
  • Juice and zest of 1 lemon
  • Salt and pepper to taste

Directions:

  1. Mix all ingredients in a large bowl! Refrigerate for up to 5 days in a tightly sealed container. Enjoy!
