This salad is legit veggie and fruit bliss and trust me when I (Britt) say the goat cheese takes it to the NEXT LEVEL (fun fact about me, I LOVE goat cheese haha!). Loving the fresh summer flavours- this salad pairs perfectly with a glass of rose, prosecco or blueberry beer.

Yield: 2 large salads


Ingredients:

  • 5 cups spinach
  • 11 cup chopped radicchio
  • 1/2 cup blueberries
  • 6 large strawberries, sliced
  • 2 tbsp pumpkin seeds
  • 1/2 cup blueberry goat cheese
  • 8 artisan cranberry fig melba toast bites, broken into crouton sized pieces

Directions: Throw all ingredients in a bowl and drizzle with honey / oil. ENJOY!
